#sEATtle: Windy City Pie

I like to eat. A lot. Food is bae. Therefore, I figured I would post reviews of the places I go to give you a little insight and maybe some ideas on where you might want to nom with your friends or special someones. Plus, it gives me an excuse to pig out on Seattle's best eats and not feel bad about it, because work!

Before we start though, I want to make one thing perfectly clear, I am NOT a professional food nerd, nor do I want to be. I dont know the intricacies of French cooking. Heck, I dont even know how to spell "intricacies." It also means that if you ask me what the best burger is, I'll probably say Lil Woody's before I suggest any kind of "gourmet" burger, unless that gourmet burger has an egg on it. Then gourmet burger wins (any burger with an egg on it wins really.) Also, my idea of a fancy pizza is anything with more than two toppings. Basically what I'm getting at is consider these restaurant reviews for the comman man/woman.

Windy City Pie is as much a legend as it is a restaurant.  No one knew where it was located. You had to order days in advance and hope for the best.  And all that makes for a super cool story...but does it make for a super good pizza?  I mean, I've been to places where chefs would make volcano onions and flip shrimps at you from across the room, doesn't mean that ish tasted any good. I had a pizza delivered to me over the weekend, one half of my choosing, the other half theirs.  On to the Chicago style deep dish food porn!

My friends, THIS is what Chicago Style Deep Dish Pizza is supposed to look like!  So here's the story, I originally ordered a pepperoni and sausage pizza (usually add mushrooms but wasn't feeling it this time. I regret that) and they hit me back and asked if they could add some stuff to half of it.  Pro Tip, kids- any time a chef asks if they can cook you something to their liking, YOU SAY YES.  So here is half sausage and pep, half sausage,pep, BACON, and giardiniera. 

A word on giardiniera. AWESOME.  If you don't know what it is, basically its pickled veggies with peppers. Hot, crisp, and will literally make everything you eat better. When I was in college I'd have my mom shiip me some from my favorite Italian deli back home (shout outs to the Sausage Kitchen!)  You want this on your pizza. You need this on your pizza.

2 things that are major about this pizza.  1- I ordered sausage, some places just line the bottom of the pie with a whole patty. Windy City didn't. Points for that. 2- crust thickness- this is the true key to a proper Chicago Style pizza.  Can't be too thick or it's a Sicilian style pie, and worse, a total gut bomb.  Can't be too thin either though, because then congratulations, you are eating a casserole.  Windy City absolutely NAILED IT.  

"Oh no!" you say, "they burnt the crust." No you dingus, thats caramelized cheese.  Let me spell that out again so you better understand (and more importantly, not send it back when they deliver it blackened around the edges) C A R A M E L I Z E D C H E E S E !! 

 

Final Verdict: I spent many many summers eating pizza in Chicago proper, so I am a complete prude when it comes to anything claiming to be anything close to as good as anything from the Land of Lincoln.  I am also a bit of an expert on the qualities necessary to make a badass Chi deep dish.  Windy City has it down to a science!  Like, legit science.  Pizza goes below the sausage so it doesnt get too greasy. Caramelize the cheese to add a unique twist and crispiness to an otherwise pleasantly doughy crust. All of this has been thoroughly planned and tinkered with until they perfected the recipe and made, in my opinion, the BEST Chicago style pizza I've had this side of Lou Malnati's, a place I love so much I had some shipped to me over the holidays. Windy City Pie is 10000000% Manley Approved.
